You will all quickly realize that I am Pinterest obsessed. From outfit inspirations and home decor projects to gift ideas and recipes, I just can’t get enough! An online place to save ALL of your (and others’) great ideas? What could be better!? So today I wanted to share with you a few delicious recipes that I found on Pinterest and successfully made!
First up, Buffalo Chicken Rolls from www.canyoustayfordinner.com. These rolls are little pieces of heaven! They are simple to make and the ingredients are all pretty easy to find in your regular grocery store. I have had a bit of trouble finding the egg rolls wrappers around the holidays, but other times of the year I found them easily. Warning – you have to like hot sauce and blue cheese for this crowd pleaser!
Another favorite appetizer recipe is Prosciutto Wrapped Asparagus from www.recipe.com. Although these veggie-based snacks work for all times of year, I have made them for Easter and for work parties in the spring. Helpful Hint: Make sure you get the provolone sliced EXTRA thin. If the slices are not thin enough, not only will each bite be overloaded with cheese, but the provolone will rip when rolling it around the asparagus.
A favorite (not so healthy) dinner recipe I found on Pinterest is Jalapeño Popper Chicken from www.ellysaysopa.com. Talk about YUM. The good news is that you can use low fat cream cheese and cheddar cheese and panko breadcrumbs to feel a bit less guilty. The hubby requests this chicken dish regularly and LOVES it every time! Serve with Spanish rice on the side for a complete meal.
Speaking of Mexican food, how about a Cheesy Enchilada Casserole that was voted Best Casserole of the Year at www.tasteofhome.com? This recipe, from www.justgetoffyourbuttandbake.com, is not entirely healthy…but the types of cheese and sour cream used can also be adjusted for a healthier version. This recipe throws together in no time at all and you can feed A LOT of people with it! I highly recommend this hearty meal for a chilly fall or winter evening.
